Chocolate Chip Coconut Cookies

When I saw this Chocolate Chip Coconut Cookie recipe on Celebrations at Home, I knew these cookies were going to make the "To-Eat" List on my diet cheat day. My husband and I are on a slow-carb diet from the 4-Hour Body book, but on Saturdays we can eat anything we want....have I mentioned how much I LOVE Saturdays???  Anyway, the thought of these cookies got me out of bed bright an early on Saturday, so I could bake them before going out of town.  They were so worth it, too!

Valentine's Day Cookies

Mine didn't turn out nearly as cute as those in the photos on Celebration at Home (maybe they sprinkled some extra chocolate chips and coconut on top of their dough balls before baking), but I did think they looked super cute on my new two-tier Valentine's Day tray from Target.

Before bed time on Saturday, I decided I would sneak into the kitchen and eat just one more cookie while it was still cheat day.  I ate THREE!!!  Needless to say, these cookies had to leave the house, so this is how cute they looked on Sunday when they made their grand exit!

Cookie Bags with Handmade Gift Tag

I hand stamped the "A Little Yummy for Your Tummy" tag and mounted it on sparkly background paper.  The two things that really set it off, though, were the dimensional flower and the cute red and white baker's twine from The Twinery.  I've really been enjoying my Twinery twine so much that I placed an order for additional colors this week.

Cookies Gift with Handmade Gift Tag

Unfortunately, the recipients of the cookies were also on diets. Whoops! Sorry, guys!

Holiday Disasters

I'm still in recovery from a big Christmas disaster at our house.  I'm not sure I've found the hostess wisdom or lesson learned from this situation, except that maybe laughter is the best medicine and sometimes even the best planning can't help you. I'll recount the story in the hopes it will bring you some laughs.

Pruitt Family Christmas Tree
Post-disaster Happy Times at the Pruitt House

On Christmas Eve, my husband and I always prepare a special dinner for my father-in-law and any of my family that might be visiting.  This year, my husband and I decided to keep it simple (HA!) by cutting down on the dishes we would make since there would just be three of us.  The menu consisted of a cranberry salsa appetizer (delicious!!!), roast prime rib with horseradish crust, potato gratin in a rosemary crust, roasted green beans, and a cream cheese pound cake with whipped cream and strawberries for dessert.

I got up early and made the pound cake, so it would have plenty of time to cool.  I used a sunflower pan and was going to pretend it was a poinsettia for Christmas.  It came out perfectly.

Christmas Disaster Cake

When my husband got up, we were synchronized cleaning and menu prepping like you wouldn't believe!  We've had enough practice that we can work super efficiently with very little communication. That morning, I even thought what a great team we make and how lucky I am.

We had made a preparation schedule of when to begin assembling each dish and what time they needed to go in the oven in order to have everything on the table at 7:00 pm for dinner. We were a little ahead of schedule when we started working on the potato gratin by rolling out the crusts, shredding the cheese, and chopping the rosemary.

I got out my new (never-been-used) Pampered Chef springform pan for the potatoes. It has a glass bottom for more attractive oven-to-table presentation (just my style).  I decided I should flip the glass in the pan, so that the smooth side was inside the pan and the textured side would be face down.  Standing in the center of the kitchen, I loosened the springform just a little, and the glass dropped to the floor.  DISASTER BEGINS!!!
Pampered Chef Springform Pan
I was so glad my husband and I instinctively closed our eyes because glass flew everywhere.  I've never seen anything break like this with glass bouncing up super high and landing so far in distance. This was way more than a mess on the floor!  There was glass on every surface in the kitchen: counter tops, kitchen table, in the burners of the stove...EVERYWHERE!  Our pantry is down the hall, and even though the door was closed, there was glass in there.  Despite our closed floor plan, glass had gotten in the dining room next door, too.

This holiday disaster literally took the cake! My sunflower/poinsettia cake, still sitting on its cooling rack, was sprinkled with glass shards and had to be trashed, along with the rolled pie crusts for the potato gratin and the freshly shredded cheese.  All food in the kitchen was contaminated. I didn't even get to taste the pound cake before it went in the garbage.

We stayed cool and calm and agreed that since we were about an hour ahead of schedule, my husband would have time to run to Target for more pie crusts, a new springform pan with a METAL BOTTOM, and more cheese.  As I began cleaning alone, I started to realize the scope of the disaster was WAY WORSE than our initial assessment, as I found glass in more and more places.  Every surface had to have its contents removed and wiped down.  It took sweeping the floor three times and vacuuming once to feel pretty good about the safety of the floor.

Holiday Disasters Pampered Chef

By the time my husband got back from Target on the craziest shopping day of the year (it wasn't a quick trip like we thought), I still had lots of decontaminating to go, and now, we were behind schedule.  As you can imagine, I was feeling pretty exhausted and discouraged. The loss of our Christmas Eve dessert was particularly disappointing to me. I even suggested we just forget cooking all together and go out to eat that night instead.  Ultimately, we decided to have mashed potatoes instead of the potato gratin, since I could make those pretty easily while the prime rib was in the oven. We put out some Pepperidge Farms Christmas cookies with our cranberry salsa appetizer for munching, deciding that would be good enough for dessert, too.

The mental and physical exhaustion continued to impact me as we continued preparing the food, though.  For example, I spilled a whole cup of sugar for the cranberry salsa down the counter top and onto the floor (later, I realized I had a bunch of sugar in the pocket of my apron from the episode, too, which is pretty funny).  This caused me to start playing it ultra safe....I was too worried to pull out any of the China pieces for the dinner in case I might drop them, so we just used serving pieces that were easily accessible.  I didn't have time to iron my tablecloth either.  As a result, our table was a little mismatchy and plain looking.

Christmas Eve Mismatch Table

When it was time to sit down to eat, all of the days dysfunction melted right away, as my husband and I decided not to mention what had happened at all to my father-in-law. The food was all delicious!  My husband, Roger, did a wonderful job with the prime rib.

Christmas Eve Dinner

I'm sure this will go down in our family's history as a funny Christmas Eve, but as for right now, I'm still a little tender from the disaster. We did get a super special surprise the next morning: a WHITE CHRISTMAS!  It really helped make things feel all better for Christmas day. We live in Alabama, so that's super rare for us to get snow at all.  Here's our house covered in snow.

Have you have had any big holiday disasters at your house?  Any entertaining disasters in general?  I would love to hear about them!  Let's have group therapy!  ( ;

Box of Christmas Cheer

I have a friend who has had a lot going on lately, and it's really taken a toll on her ability to get in the Christmas spirit.  It was breaking my heart to see her feeling so down, so I knew I had to do something and fast!

Box of Christmas Cheer

That's how I came up with the idea for a Box of Christmas Cheer. I spent a night gathering up fun little Christmas things at Target in bright and cheerful colors. I also made a "Merry" party banner and some new-to-my-collection Christmas ornament gift tags.  I would have liked to have made more items by hand, but I wanted to get the box sent ASAP.  Right from the beginning, I decided that I would only include what I could buy or make before bed time in order to have the box ready to ship the next morning.

Christmas Cheer Box Contents

Box of Christmas Cheer Contents:
  • Pepperidge Farm Gingerman cookies (So yummy dipped in Cool Whip!)
  • Pepperidge Farm Almond wreath cookies
  • Puffs tissues in Christmas hologram box
  • Penguin cookie plate
  • Snowman 3D straws
  • Bright Christmas napkins
  • "Merry" party banner by Belly Feathers
  • Hand-stamped ornament gift tags by Belly Feathers
  • Ornaments and Christmas soaps from Michael's (not pictured)
  • Snowflake sucker from Dollar Tree (not pictured)

Merry Christmas Party Banner

Christmas Ornament Gift Tags

I packaged it all up with bright green tissue paper in a USPS priority mail box for fast delivery.  Who wouldn't be able to smile upon opening such a colorful box!!  Of course, to sprinkle on a little extra love, I drew Christmas-y messages all over the box with Sharpies.  I'm not a very good drawer, so they definitely looked homemade.

Box of Christmas Cheer Gifts

The package arrived two days later at a much needed time, and I think it did just the trick! With the busy hustle of the holidays, it's so easy overlook those that need a little extra love this time of year.  I'm so grateful for all of my blessings and hope that I can continue to keep my eyes, ears, and heart open this holiday season and throughout the year.

Happy Holidays!

Show and Tell: Lenox Butler's Pantry 3-Part Divided Server

Today is the last day of Show and Tell Week for entertaining and serving pieces.  I've had so much fun sharing my personal favorites with you all week, and I've saved my absolute favorite for last: Lenox Butler's Pantry 3-Part Divided Server.

Don't miss your chance to win a Belly Feathers surprise! Be sure to join in by sharing a photo of your favorite entertaining piece on Facebook by midnight Central Time tonight (10/22)! See bottom of post for details.

Photos just don't do this beauty justice!  I waited almost a year to get her on back order from Belk, which is probably why I lover her so much.  Maybe it was a case of "absence makes the heart grow fonder"!  My heart just melts when I pull this out of my China cabinet. I love the darker cream on cream detailing, which all of the items in the Butler's Pantry line from Lenox have.

My husband and I registered for lots of Butler's Pantry pieces when we got married, as it was the only pattern of plates (China or everyday use) we could agree on.  All of the pieces are a little different, as if a butler had collected cream-colored items through the years to fill his cabinets. There are a few different patterns of plates and bowls that you can mix and match to create an ensemble you love. I really like it because the pieces are pretty and still functional for everyday use.  However, this server is huge and just too big to have an occasion to use very often.

I received it shortly before Christmas last year. Since we were doing a really small Christmas Eve dinner for just my husband, father-in-law, and me, it was a perfect size for serving turkey in the center and stuffing on either side.  With so few of us, I didn't want to put the leaf in my dining room table, which left us little room to put the entire turkey on the table, so this 3-part divided server was perfect.  Of course, I was so thrilled to use it, too!

Here's a shot of our humble yet delicious Christmas Eve feast.

We're doing a larger Thanksgiving this year, so I'll be using one of my large Butler's Pantry platters to put the entire bird on, and I think I'll use this divided server for stuffing on either side with mashed potatoes in the center.  Mmmm!  All this talk about food is making me hungry for the holidays!

Show and Tell Week: Cake Stand with Ribbon Holes

Next up in Show and Tell Week for entertaining and serving pieces is probably the very first pretty serving piece I ever got: my Ribbon Loop Cake Stand.  This was a gift from my mom that has been so useful through the years.

Better Homes and Gardens Cake Stand

(Be sure to join in by sharing a photo of your favorite entertaining piece on Facebook! See bottom of post for details.)

As I started to look for photos of my cake pedestal in action, I realized that it's probably never been used for a cake!  I've used it to display party favors, add height to a buffet, and for other desserts. The closest thing to a cake was this berry shortcake. It didn't look anything like the gorgeous picture on the cover of Martha Stewart Living, but it was so yummy on the 4th of July!

Cake Stand with Berry Shortcake

More often, I've used the cake stand for cupcakes.  Here's a picture with these awesome Chunky Cherry Cupcakes.  Part of why I love this cake stand is that it looks great as is, or you can decorate it up with ribbon and a tag or other embellishments to match your party decor.

Homemade Cherry Cupcakes on Cake Stand

I also use the cake stand at Thanksgiving and Christmas to give my pies a lift, especially whichever pie ends up in an boring Pyrex pie plate.  Cake stands make great additions to any buffet no matter what kind of food you serve on them because the extra height adds visual interest.

Pie on a Cake Pedestal

I wish I had a picture of these cute candle party favors I made for a Stampin' Up party a few years ago because they looked so cute on this stand, but I couldn't find one. So, here are some party favors on a different cake stand.  Putting small favors on a cake stand makes them stand out and scream, "Don't forget to take me home!"

Show and Tell Week: Cupcake Stand Tower

Show and Tell Week for entertaining and serving pieces continues with another versatile piece from my entertaining arsenal: my Cupcake Stand.

(Be sure to join in by sharing a photo of your favorite entertaining piece on Facebook! See bottom of post for details.)

I love this cupcake stand because it has four different toppers that you can change out for the different seasons.  My favorite is the twirly one. The stand unscrews and can stack flat for storage, too, but I enjoy just leaving it out and assembled all year round with the twirly topper.

I've used the star topper for a Blast-Off Rocket Baby Shower for my friend Brandi.  One thing you might not have considered about cupcake stands is that they're great for serving other foods. At the baby shower, we served mini sandwiches in cupcake liners.

For a little photo shoot before the event, I filled liners with pretzels and candy, which would be great at party, too.

TIP: I love using silver Reynolds foil baking cups like those in the pink cupcake pictures below because they're pretty but also because you can just bake them on a cookie sheet instead of a muffin pan.  In between each of the silver tins is a white paper liner, which the package says aren't safe for baking.  I save these for occasions like serving sandwiches at the baby shower above or for snacks.  They're great for serving crumbly desserts, too.  The white liners are always coming in handy for projects.

Here are some pictures from a birthday party.  I love how the pink cupcake frosting really pops against the dark background of the cupcake stand.

My stand is part of the Better Homes and Gardens product line from Home Interiors and Gifts.  I hate that HI&G went out of business because I have so many wonderful pieces from the Better Homes and Gardens collection. I still look around on eBay for pieces from time to time, which is how I got this stand.

Only two more days left of Show and Tell Week, so be sure to check back in for more of my favorite entertaining and serving pieces!

Show and Tell Week: Ruffled Casserole Dishes

Everyday is worth celebrating! That's why today I'm featuring my Ruffled Casserole Baking Dishes for Show and Tell Week, which are perfect for everyday meals.

Ruffled Blue Casserole Dishes

Be sure to join in Show and Tell Week by sharing a photo of your favorite entertaining piece on Facebook by Friday for a chance to win a surprise! See bottom of post for details.

I initially purchased the large blue casserole dish at Tuesday Morning.  I thought it looked so pretty coming out of the oven with its ruffled edges, that I knew I had to go back and get the two smaller versions.  This picture shows one of our favorite dishes, a Denver omelet bake.

Easy Oven-baked Denver Omelet

To be honest, I've never actually used the two smaller ones, but I love them just the same.  I think they'd be great for serving side dishes. Maybe the tiny one would be good for serving olives, nuts, or other appetizer-type foods.

I think everyday meals and the hard work of cooking can be made a little more fun by having some prettty oven-to-table cookware like these casserole dishes. What do you think?

Stay tuned for more of my favorite entertaining and serving pieces everyday this week!

Show and Tell Week: Homemade Hurricanes

My Homemade Hurricanes are the second items I'm featuring in my Show and Tell Week for entertaining and serving pieces.  (Be sure to join in by sharing a photo of your favorite entertaining piece on Facebook! See bottom of post for details.)

Dollar Store Hurricanes

I saw a great tutorial on how to make these hurricanes on Decor Chick using glass vases and candlestick holders from Dollar Tree, and I'm so happy I tried making two for myself a few weeks ago.  At around $2 each, you can't beat how good they look!  I filled this one with dried pinto beans ($1 per bag) and a candle, and I think it looks great in my entryway.  These would make great party centerpieces, and you can switch out the type of dried beans for a different color and look.

Dollar Tree Hurricane Homemade

I did something similar for my mantle by adding candy corn and a little pumpkin in the other hurricane for Halloween.

Halloween Decorations Hurricane

TIP:  To save on candy when filling large jars for parties, add some clear plastic cups upside down in your container to create a hollow area. It's a little hard to see the cup in the picture below, but that's what my hurricane looked like before I poured the candy corn in it.

Save on Candy in Large Jars

If you were doing a candy buffet at a party, these hurricanes would be great.  For variety you could shop around for different sized containers to glue on top of the candlesticks.  My blog friend Staci at Lizard & Ladybug came up with some cute variations below.  I love how she tied ribbon around the base for added detail!

This project was the first time I'd used glass glue before, so one of my hurricanes looks a little messy on the bottom.  The glue was in the same kind of bottle as super glue, so I thought it would be a gel like that. Nope! It's a runny liquid, so I squirted out way too much on my first try. I knew what to expect on the second hurricane, and it turned out perfectly.

Stay tuned for more of my favorite entertaining and serving pieces all week!

Show and Tell Week: Trifle Bowl with Removeable Base

The first item I'm featuring in my Show and Tell Week for entertaining and serving pieces is a something I've been using a lot lately: my Trifle Bowl.  (Be sure to join in by sharing a photo of your favorite entertaining piece on Facebook! See bottom of post for details.)

Even though I knew I could get one cheaper at TJMaxx or Marshal's, I splurged on this Pampered Chef Trifle Bowl last year at a friend's party.  It has a removable base, which was so worth the splurge because it takes less space to store the trifle dish since the base fits inside and you don't need as much room in the fridge to keep desserts cool before serving.  Plus, I've used the bowl without the base plenty of times.  It's super versatile!

On Friday, I made this yogurt, granola, and peach breakfast trifle to take to work as part of my donut day.  I got the idea from this month's issue of Martha Stewart Living.  It was super simple, as I just layered vanilla yogurt, granola from the cereal section, and two fresh peaches on top.  I was shocked at what a big hit this was!  Almost all of it was gone by the end of the day.

Last Christmas, the trifle dish made a quick and easy Christmas centerpiece.  I just put some extra clementines and cranberries I had laying around in it.  I think it added a really nice freshness to the room and was surprisingly elegant for something thrown together.

This trifle dish travels really well, too.  It's more stable sitting on the floor board of your car without the base.  Here's a picture of a yummy pineapple cheesecake trifle before I drove it to my mother-in-law's house.

Stay tuned for more of my favorite entertaining and serving pieces all week!

Show and Tell Week: Entertaining and Serving Pieces

Starting tomorrow (Sunday) through Friday, I'm hosting a Show and Tell Week on my Facebook page.

Please join in the fun by taking a photo of your favorite entertaining or serving piece and uploading it onto the Belly Feathers' Facebook Wall with a few lines about why you love the piece, any special memories you have of it, where you got it, or why it's super useful. (You can upload a photo or share a link to your blog/website that talks about your favorite piece.)

I find I don't have enough occasions to use all of my favorite pieces, but that doesn't mean I enjoy them any less.  So, I'm using this Show and Tell Week as an opportunity to pull them out of my cabinets and storage to enjoy and admire them. Throughout the week, I'll be sharing photos of my favorite pieces here on my blog, whether I've ever used them or not.

I'd love for you to pull out your favorite pieces, too!  To thank you for participating, I'll draw a name of someone who shared a pic next Saturday for a special surprise.
